About
Japanese coffee, brought home.
Kissa Lab is an independent publication about Japanese coffee culture, written for curious home brewers in the United States. The name says it plainly: kissa (喫茶) for the unhurried Japanese coffee house, and lab for the hands-on testing of gear and technique.
Why we exist
Japan turned pour over into a craft — patient, precise, and quietly obsessive. From the hand-drip counters of old kissaten to modern makers like Hario, Kalita, and Fellow, there is a whole world of method and design that most English-language coffee sites only touch in passing. We go deep on it, and we translate it into something you can actually do in your own kitchen.
What we cover
- Brew — recipes and techniques to brew like a Japanese café.
- Gear — honest reviews of Japanese drippers, kettles, and grinders.
- Culture — kissaten, roasters, and the story of coffee in Japan.
How we work
We aim to be useful before we are anything else. Our recommendations are based on research and hands-on brewing, not on who pays the most. When a product isn't worth it, we say so. For the full picture of how we test, cite sources, and handle affiliate links, see our editorial policy and affiliate disclosure.
